2020 Cabernet Franc

The sweet nose opens with classic Cabernet Franc notes of green bell pepper and white pepper, before transitioning into a melange of red fruits (bright red cherry, strawberry, raspberry) and fig. Herbal notes of eucalyptus and fennel lengthen into dried italian herbs, tomato, sweet tobacco and a hint of graphite. A bouquet of purple flowers, cloves, cola and vanilla convey a delightful sweetness. On the palate, the wine takes balance to an extreme with well matched acidity, tannin, and body that lengthen into a medium finish. But lest you think this wine average, pair it with a sweet tomato sauce or lighter italian fare… or enjoy its sweeter side paired with a cheeseboard or simply nothing at all! 


Winemaker’s Notes: This 100% Cabernet Franc wine was harvested early on October 10th due to an inbound hurricane. The grapes were destemmed, vigorously sorted, and lightly crushed with minimum effective sulfites, before a light saignee, and transferred to its temporary home in an open top fermentation bin where it was punched down frequently to encourage it to reveal its secrets. The wine was aged in french oak (approximately 43% new) for 17 months before being bottled in its forever home (until your glass!), in March of 2022. 70 cases produced.
