2021 Cabernet Franc

The nose is complex and leans savory with characteristic Cabernet Franc opening notes of bell pepper that transition into jammy aromas of strawberry, redcurrant, black cherry kirsch and fig. White pepper and eucalyptus lead into fresh oregano and thyme, with savory elements of briny olive, mushroom, leather and a hint of roasted meat. Baking spice and vanilla are layered throughout. On the palate, the wine is a well balanced medium wine with a pleasing acidity. Milder tannins lean out the body, but still carry the wine into a lengthy finish. This wine lends itself to a glass enjoyed on its own or would pair well with charcuterie or lighter Mediterranean appetizers. 


Winemaker’s notes: 1.5 Tons of Cabernet Franc grapes from Opequon vineyards were harvested on October 14th. The grapes were destemmed, vigorously sorted, and lightly crushed with minimum effective sulfites and lovingly ushered into an open top fermentation vessel. Gentle punch-downs occurred daily until pressing. This wine lived comfortably in french oak barrels (33% new) 16 months until bottling in February 2023. 70 cases produced.
